Our Olive Oil

From our grove in Puglia, grown without chemical treatments, produced in small quantities and cold pressed locally after harvest.

Why we share it

We do not produce olive oil as a business.
It is simply what the land gives each season.

The bottles we share come from our own harvest, pressed locally and brought back with us.
They allow us to care for the grove and, slowly, to plant new trees where others have been lost.

Each bottle contributes directly to caring for the grove, replanting trees, and supporting the people who continue to work this land.

How it's Made

Our grove

Where the season begins, among trees that have shaped this landscape for generations.

Early Harvest

We harvest early, when the olives are still green, to preserve freshness and character.

Same day transport

The olives are brought to the mill within hours of picking.

Local collaboration

We work closely with local farmers and mills who know the land and its rhythm.

Ready for Cold Press

Each harvest is processed in small quantities, keeping the oil true to its origin.

Cold pressing

The olives are pressed gently to preserve their natural aromas and nutrients.

Fresh oil

The result is a vibrant, oil that reflects the grove and the season.

Why it matters

Across Puglia, millions of olive trees have been lost to Xylella fastidiosa. For many families, the trees are not only a landscape, but their livelihood.

Caring for a grove today means more than maintaining what remains. It means slowly replanting, supporting local knowledge, and keeping the land productive for the next generations.

We work the land as gently as possible, avoiding chemical treatments and focusing on long-term soil health.

The oil we share is one small part of that effort.
